Cochon de Lait
Thursday, July 1 from 6PM – 9PM at The Barn at Pursell Farms.
One of Acadiana’s most famous and delectable dishes is also its most impressive. To make Cochon de Lait, which literally translates to “suckling pig,” Chef Joe will pit-roast a whole marinated young pig and then slice it thin and serve it. The roast is happening at the barn and we will have live music with local musician, Dean McConatha, and all the dining accoutrements including, a delicious farm garden salad with Chef’s own smoked oyster dressing, smothered okra with tomatoes and bacon, candied yams and dirty rice, followed by rich southern banana pudding and summer watermelon.
The tradition of cooking of a pig over an open hardwood fire has been a social event in Louisiana for as long as anyone can remember.

Chef Joe Truex is a native of the “Cochon de Lait Capital of the World, Mansura, Louisiana”. Chef Joe has cultivated first-hand experience with this hometown event which is now in its 47th year and brings all his expertise and Louisiana roots to bear for this one-of-a-kind pig roast.
